The dining room is divided into market-like sections — a distinctive, lively layout — and because portions and prices are nearly identical, you can sit wherever and order. Locals recommend the modeum (assorted) plate — order it salted — and watch the grill master char the pieces over yeontan (briquette) coals. The grilling is addictive and disappears quickly; finish with (stir-fried rice with the leftover tripe) for a perfect ending.
