Started in 1953 by a founder who fled from Goksan in Hwanghae during the Korean War, Wonmi Myeonok is now a third-generation, Daejeon institution for . When you sit down they bring a warm cup of myeonsu (noodle cooking water) to gently settle your stomach. Their signature uses a clear chicken broth in the Hwanghae tradition: thin buckwheat noodles made from long-roasted, milled buckwheat are piled with yellow egg strips and roughly shredded chicken. The savory chicken-infused broth and the nutty chew of the buckwheat noodles play very well together — taste the broth first, then stir in the spicy seasoning sauce when about half the bowl remains.
