Gu Steak 528 introduced Korea’s first in-house dry-aging cellar in 2009. The kitchen uses only U.S. beef from the top 1.5% quality tier, from cattle under 22 months. Cuts are aged under tightly controlled conditions (about 1–2°C and ~70% humidity) for two to five weeks depending on the cut, concentrating flavor as moisture evaporates. T-bone and Porterhouse — letting you taste sirloin and tenderloin together — are crowd favorites, and there are set menus that present steak alongside complementary dishes.
