They insist on traditional suta-myeon (handmade, hand-pulled) noodles that are chewy without being tough. The sauce for the is built on a meat-and-bone broth seasoned with gochugaru (chili flakes), garlic, soy sauce and ginger — the slow-simmered bone stock (sagol mixed with other bones) gives it a deep umami. The signature hoe- tops basic buckwheat noodles with seasoned pollock (myeongtae hoe), adding a springy texture and a bright, slightly sweet-spicy finish.
