Founded in 1994 in Gangwon, Jeongdeun Sikdang is known locally as the originator of jang-. Noodles are made to order—rested wheat dough is rolled and cut repeatedly—then simmered in a thick, gochujang-based broth. The bowl arrives topped with generous gim (seaweed) flakes and kkaet-garu (roasted perilla powder) for nuttiness; chewy noodles, roughly sliced potatoes and a softly broken egg add a hearty, comforting texture. If you like heat, ask for sliced cheongyang chilis and a grind of black pepper.
