Songgeuk has been part of Gwangju’s Songjeong alley for 45 years. When you order here you get a generous spread — a bubbling gamjatang made by simmering pork bones and radish, fresh ssam vegetables and about eight well-made banchan. The arrives sizzling on a hot stone plate with a glossy finish; the rib meat is aged for 24 hours, given an initial char in a charcoal oven, then finished on the grill so each bite stays tender and juicy. The soy-based sauce is richly savory without being overly salty, so it’s easy for all ages to enjoy.
