The signature is served with an aged seasoning paste and sheets of gim, with the clear broth brought separately so you pour just a little and mix; add a splash of vinegar or a dab of mustard to suit your taste. The house sauce (made from pear and onion and matured 5–6 months) is balanced rather than sharp, and the spicy-sweet topped version with seasoned pollock (myeongtaehoe) is a local favorite. Housed in a standalone 130-seat building, it’s convenient for visitors with parking and reservations.
