Bak Gunja Jinju is run by the eldest son and his wife of a couple who once sold Jinju at Jinju Central Market. They follow a family recipe passed down through generations to faithfully recreate their parents' flavors. The signature Jinju mul- is topped with thick, pan-fried beef slices (yukjeon) and a neat pile of thinly sliced egg garnish. The broth is built from beef bones, shank, and brisket simmered more than 12 hours, aged for a few days, then further enriched with dried squid, dried pollock, and small salted fish. The staff stir the boiling stock for 3–4 hours and finish it by plunging a heated iron rod into the pot to remove any off-odors and keep the broth clean and bright.
