A local specialty born in Seonghwan Ihwa Market. You can still find it on five-day market days, but the shop has a separate storefront now so it’s available more often. The -guk ( soup) uses a pork head-bone broth that tastes clean rather than heavy. Add a little of the house seasoning paste to the lightly seasoned soup and it becomes rich and deeply flavorful. The is made in the Byeongcheon style, with coarse chunks of coagulated blood and vegetables, offering an old-fashioned, toasty flavor. Well-fermented napa kimchi, kkakdugi, and a separately seasoned saeujeot (salted shrimp) are served alongside — many diners call it an ‘unforgettable’ bowl. Note: on market days some dishes sell out early.
