Chef Lee Jin-wook, formerly of The Westin Chosun's Sushi Jo, runs this intimate sushi counter where tightly composed seasonal and precise nigiri are the draw. The lunch (fully booked through late March) showcases a sequence of tsumami — small seasonal bites — including a memorable inari doromaki: a tofu pouch filled with chopped tuna and a touch of sea urchin that lifts the whole set. The house specialty that locals ask for again and again is a gunkan piled high with uni (sea urchin), wrapped with nori so each bite is richly creamy and ocean-forward.
