Their signature is made by halving Pacific saury, removing head and innards, and air-drying the fish on nets with sunlight and sea breeze until it becomes firm and pleasantly chewy with a clean, lightly rendered fat. A tangy, spicy chojang (vinegar–gochujang dipping sauce) cuts through the oiliness and gives the fish a bright finish. The kitchen also offers classic anju like dwaeji duruchigi (spicy stir-fried pork), pajeon, (fish cake soup) and dubu kimchi; is available for nationwide delivery on orders of two portions or more.
