The roll became famous after staff at nearby teahouses passed portions to hungry patrons, and the recipe grew into one of the country's beloved styles. The signature thick roll is filled with carrot, burdock, danmuji (pickled radish), cucumber, ham and densely packed, finely shredded egg jidan — the egg’s soft, slightly crumbly texture and toasty flavor are the highlight. Note: plain is takeout-only; to dine in you must order together with the noodles.
