Tucked deep in the Gogiri Valley, Gogiri occupies a hanok-style building with a calm, scenic atmosphere. The owner trained under Hongcheon’s Jangwon and has developed a distinctive take on : their signature (perilla oil) uses freshly milled, 100% buckwheat noodles milled in small 30-portion batches for a springy, chewy texture. Noodles are tossed with perilla oil and fermented soy sauce, then generously topped with toasted sesame leaf powder and shredded gim (seaweed). The seasoning is intentionally mild so the buckwheat’s flavor comes through — when you’ve eaten about half, ask for cold broth to turn it into a refreshing mul-.
