Their signature Bibim is served with a neat coil of buckwheat noodles topped with spicy-sweet sauce, cucumber, egg, and shredded gim; the noodles are made from an 8:2 mix of buckwheat flour and sweet potato starch for a soft yet pleasantly chewy bite. A local trick is to pour the house broth over half-eaten bibim noodles for a cooler, milder finish — the broth is a deep, umami-rich stock made from sagol (beef leg bones) simmered 24+ hours with kelp and radish.
