(53 reviews)A three-generation shop in Yeoju’s Cheonseori noodle alley with over 90 years of history. The restaurant is so popular it runs an annex across the street. Their signature Bibim is served with a neat coil of buckwheat noodles topped with spicy-sweet sauce, cucumber, egg, and shredded gim; the noodles are made from an 8:2 mix of buckwheat flour and sweet potato starch for a soft yet pleasantly chewy bite. A local trick is to pour the house broth over half-eaten bibim noodles for a cooler, milder finish — the broth is a deep, umami-rich stock made from sagol (beef leg bones) simmered 24+ hours with kelp and radish.
