Called a living piece of history, Hayeonok has kept its Jinju-naengmyeon traditions since 1945 under the second generation. Meals start simply — a fresh salad and a warming -guk (beef blood-curd soup) — before the signature bowls arrive. The Jinju mul-naengmyeon comes piled with colorful toppings (cucumber, jidan egg strips, pan-fried beef yukjeon, thin red pepper) and rests on a broth made from mussels, anchovy, bendaengi, kelp and beef bones. They flash a 400°C+ cast-iron piece into the stock during cooking to tame any fishiness and sharpen the clean umami. Also worth trying is the Jinju bibim-naengmyeon, dressed with 어육 간장 (a fish-and-meat soy sauce) that gives the dish a savory, slightly historic courtly note.
