Their signature Dongnae uses a broth simmered from radish, scallion, onion and baendaengi (small local fish) mixed into a batter of glutinous rice, rice flour and non-glutinous rice. The batter is cooked on a brass griddle shaped like a pot lid with rapeseed oil and scallions spread so the batter soaks in — resulting in a moist, slightly dense texture rather than a thin crisp. Instead of soy sauce, locals dip the in a tangy chogochujang that brightens the seafood and scallion flavors. Set menus including Dongnae and steamed sea snails are available for parties of three or more.
