Tucked in a narrow alley between Seomun Market and Dalseong Park, Yetjip Sikdang has been run by the same family for three generations since 1948. The silvery mother-of-pearl chest, warm red wooden floors and low tables give it the cozy feeling of visiting a grandmother's house. Their signature dish is made with Hanwoo beef, served with tofu jeon, kkakdugi (cubed radish kimchi), seasoned chives and pickled chilies. The broth is clean and not greasy, flavored with green onion and taro stems, and features thick slices of lean shank instead of fattier brisket. Try a spoonful as served, then add minced garlic halfway through to enjoy a deeper umami — the soup broth is refillable.
