The kitchen is known for two signatures: Mul- served in a cool broth that blends chicken stock with dongchimi, and the unusual Kkwong (pheasant) made with pheasant broth. Noodles are coarsely ground buckwheat, slightly textured but tender, and the broth is noticeably milder and sweeter than many modern versions. Instead of the usual beef pyeonyuk, toppings here often use chicken and jidan (thin egg strips). Regulars include displaced North Korean natives remembering the old Pyongyang taste and their descendants; portions are generous and prices are lower than comparable spots in Seoul.
