Their signature - arrives with a reddish, savory broth crowned with shredded gim (seaweed), pumpkin slices, and sesame-salt; the spicy-savoury seasoning is a blend of gochujang, doenjang, and steamed ground chili, which gives a clean, spreading heat rather than cloying spice. The noodles are made with a dash of soybean flour for a toasty, chewy bite that lingers with the broth. Spice is adjustable in five levels, from a mild white to very hot.
