Its signature is rice that comes already mixed: the cooks repeatedly ladle hot seonjiguk (blood-soup) over the rice in a traditional toryeom process (they say roughly 50 times), then top it with scallion salad and a generous portion of (raw marinated beef). The toryeom makes the grains springy and glossy, the nutty perilla oil and sharp scallion dressing cut through the richness, and the accompanying seonjiguk is long-simmered and deeply flavored.
